Salad Recipies

A bunch of Kale (A cabbage like veg)

A few apples (the crispy fruitiest you can find!)

A medium bulb of fennel

80 oz goats cheese

1 cup / 340g of dried cranberries

1/4 cup / 55g pumpkin seeds

1/4 cup / 55g Olive oil

lemon Zest

1 tsp maple Syrup

2 tsp Djon mustard (optional)

A pinch of salt

Step 1

Wash and prepare the Kale by breaking up the leaves from the ribs and carefully chop them into small pieces.

Step 2

Season the kale with a pinch of salt

Prepare the apples and chop into slices. 

​

step 3

Slice the fennel finely, but without chopping your fingers off!) and transfer all the rest of the ingredients into the salad bowl.

​

For the Dressing

Mix the lemon zest, maple syrup, olive oil and mustard into a bowl a lightly whisk. 

Drizzle on your salad, and wait 10 minutes for the dressing to spread and serve. 

​

Kale Salad
Arugula & Green apple salad

​

serves 4

2 limes

3 tbsp avocado oil mayo dressing

1 tbsp olive oil

4cups /four handfuls of baby spinach

1 granny smith

1/3 cup/43g pine nuts

1/2 cup/64g parmesan grated/shavings

2 tsp of brown sugar

1 tbsp water

Step 1

Grate about a teaspoonful of peel and squeeze both limes. 

​

Step 2

Combine the lime juice with the avocado mayo,olive oil sugar and water.

​

Step 3

Chop the apples into thin slice after washing thoroughly and leave the skins on.

​

Step 4

Add the apples with pine nuts, and well washed spinach leaves.

​

Step 5

Drizzle on your homemade dressing, and enjoy!!

Arugula & Green Apple Salad
Sweet Spiced butternut squash
Sweet Spiced Butternut squash

2 lbs of butternut squash

2lbs of large white potatoes 

1 (13)oz  Pepper jelly

pinch of salt & pepper

​

Step 1

wash & de-seed the butternut squash

Peel & Mash.

Step 2

Once prepared & ready pop in the oven to bake for

around 20 mins, or until baked & tender.

Step 3

Chop the potatoes into cubes in salted water, until there

so soft they can be mashed. (cutting them up smaller

makes them coz quicker).

Step 4

when both the potatoes and squash have been cooked, drain the potatoes and then add them to the squash.

add salt and pepper jelly to taste.

Step 5 

Mash by hand or by electric mixer, which will help make

the mixture very smooth, and soup like.Add seasoning,

the way you like it!

Pepper Jam!

​

In America, there is something I would liken to our English chutney's, called Pepper jam. You mix with the potato and sugar. All there really is to it! is different peppers, with

some jam sugar, apple cider, Not forgetting Jalapneos

for the people who like it hot!!!
