Apple Spice Cake With cream cheese Frosting
1 1/2 cups / 225g of cream cheese
3/4 cups/ 115g of light Brown Sugar
1 1/2 cups/ 225g of pastry Flour
2 Large Eggs
1/4 tsp Baking Soda
1/4 tsp baking powder
1/2 cups / 75g of butter
1/3 cup / 50g buttermilk
2 Apples
1/4 tsp salt
1/4 tsp of nutmeg, cinnamon, cloves, ginger
1/2 cup / 75g of pecan nuts ( Optional)

Okay, oven's on at 350 degrees & butter an 8" cake tin ready.

Mix all the dry ingrediants, so your flour, baking soda and powder, cloves, cinnamon, nutmeg, ginger, and salt, get some elbow grease into it!!
​
Now mix in the butter and whisk until nice and soft, in go the eggs, sugar, vanilla flavouring, and buttermilk.
​
Mix in with the dry mix, so a bit more elbow grease required!!
​
Pop into the cake tin and then the over for about 30 minutes.
​
Just time to make your frosting!
8oz cream cheese
4 tbsp of salted butter
1/2 tsp vanilla extract

Mix or whisk all together until smooth and creamy.
​
Be careful when taking your cake out, and wait until fully cooled to top your cake with your frosty goodness, or it'll all melt on top!!

Winter Warmer fruit Crumble
A good one for when you're out of the cold and frosty day!
​
300g of frozen or fresh fruit (I tend to use apples, Blackcurrents, and raspberries, depending on the season
1 cup / 240g of butter
1 cup / 120g Oatmeal / porridge oats with 1 tsp...(or as spicey as you like!) cinnamon and nutmeg
1cup of soft brown or natural sugar
For fruit

Step 1
Pre-heat the oven, and have a dish or pie tin at the ready!
​
Step 2
To prep the fruit, if fresh peel and wash , if frozen pop all into a big pan, with one cupful of sugar, and heat until soft, adding some of your cinnemon to the fruit.

Step 3
Combine the oats, flour, sugar and butter together, If you have clean hands get them stuck in and crumble the ingredients together.

Step 4
Layer the fruit at the bottom, and sprinkle the crumble topping on top.
​
Step 5
Pop in the oven for 20-30 minutes, but keep checking, when browned and smelling lovely, it's ready!!

Helpful Tips
Don't forget, crumble doesn't have any raw eggs in so, it won't take quite as long as a cake, it may sound obvious but leave it too long and it will burn!
​
Can be served with, cream (of most kinds!), ice cream (particularly preferable in summer, or my personal fave custard or soya custard alpro soya!)
